Bbq Prawn skewer wraps with wild garlic pesto & Waterlemon Lime Cocktail

This month’s recipe is a delicious prawn skewer wrap that you cook outside on the BBQ! It can be paired with a watermelon lime cocktail or mocktail, which I’ve included a recipe for below. Enjoy! x

Bbq Prawn skewer wraps with wild garlic pesto

SERVES 2

Ingredients

– 1 disposable bbq
– 2 wooden skewers
– 2 large flour tortilla wrap
– 8 raw prawns (remove shells)
– 4 cm slice feta cheese
– 2 handfuls of spinach
– 2 spring onions

Wild garlic pesto

– 1 big handful wild garlic
– Small handful curly parsley
– 60g toasted pine nuts
– 60g parmesan cheese
– 150 ml olive oil (1/2 extra virgin 1/2 plain)
– Half lemon
– Salt
– Pepper

Method

Pesto (make at home)
– Place all ingredients in a food processor apart from olive oil
– Blitz for 1 min then slowly add the olive oil with mixer still going

On the beach
– Light disposable bbq and wait till ready to cook (read instructions)
– Soak wooden skewers (stick them in a bottle of water for a few mins so they don’t burn)
– Skewer the prawns through both ends so it will rest on bbq sideways and is easy to turn
– Rub olive oil over the prawns and sprinkle with salt and pepper
– Place prawn skewers on bbq and turn once (1-2 mins) and cook the other side for the same time.
(They cook fast so may only need 1 min each side)
– Once cooked set aside

Assemble: work quickly!
– Place flour tortillas on bbq
– Spread the wild garlic pesto and sprinkle spinach on top followed by the crumbled feta.
– Place a spring onion in the centre
– Take off the bbq and place on flat surface
– Place one prawn screwer per wrap and start rolling.
– Remove wooden skewer

Watermelon lime Mocktail & COCKTAIL

MOCKTAIL

Ingredients
– 8 cups seedless watermelon cubes
(either fresh discard the seeds yourself or pre packed from super market)
– 6 tbsp honey
– 1/2 cup of fresh lime juice
– 1 1/2 cups of water or sparkling water
– 8/10 sprigs of mint
– Ice cubes

Method
– In a blender purée Watermelon cubes
– Strain into a large bowl with a sieve and transfer into a jug full of ice
(about 2 1/2 cups watermelon juice should be left)
– Stir in honey and lime juice
– Stir in water, mint and chill

COCKTAIL

Ingredients 
– 8 cups seedless watermelon (as above)
– 3/4 cup vodka
– 1/4 cup triple Sec
– 5 tbsp fresh lime juice
– Ice

Method
– Blitz watermelon as above then sieve through fine strainer
(2 1/2 cups approx left)
– Stir in vodka, triple Sec and lime juice
– Pour into a jug full of ice and add sprigs of mint
